Hmm.. which sword skills are we talking about? One-on-one combat,
sword testing, sword throwing, sword swallowing....?

Iijima Ai for the last.

Wasn't he the guy who is said to have committed sepuku by cutting
off his own head?

How about Kusunoki Masahige? He is always portrayed as a martial paragon in the chronicles.

LOL--it would take skill to cut off your own head,
wouldn't it?

Bah! That's nothing! Nitta Yoshisada (1301 - 1338) managed to cut off his own head and bury it!

"Even if one's head were to be suddenly cut off, he should be able to do one more action with certainty. The last moments of Nitta Yoshisada are proof of this. Had his spirit been weak, he would have have fallen the moment his head was severed."
Hagakure

A curiousity - especially as he was attending a family BBQ at the time ... no, that's a fib, but imagine! ("Mum! Dad's buried his head again!")
